Degrees of Steak Doneness Chart
November 5, 2011I would have killed to have this chart when I was a Server! It would have been printed and laminated, and shown it to any table who complained about their steak cooking temp without good reason! That might have affected my tips though…but then again…I spent the majority of my time serving in England, and tips are few and far between.
It’s also worth pointing out that no matter how long you stare at this chart, you won’t find a “medium-medium-rare” degree of doneness. That’s because it doesn’t exist. It doesn’t matter how many times I hear people ask for that, it still blows my mind. Probably because I’m English, and typically over there you get what you’re given in a restaurant…

An Italian white wine named Est! Est!! Est!!! got its name from a medieval story (you decide whether it’s true)….
A bishop was planning to travel the Italian countryside and asked his scout to find inns that had good wines, marking the door with “Est” (“It is” or “This is it”). The scout was so excited about the local wine found in the area that he marked one inn’s door “Est! Est!! Est!!!”
I’m not too sure which door he marked, but I’d like to know because most Est! Est!! Est!!! is mediocre. True story.

The New Wine Store on the Block: W90+

With the official opening of its doors in the second week of November, W90+ wine shop hopes to elevate the wine-buying experience for local residents. Located at 3548 Saint Johns Avenue in the heart of Avondale, the store will be the first in Jacksonville to feature wines rated 90 points or above by “globally reputable sources” such as Robert Parker’s Wine Advocate, the Wine Spectator, and Stephen Tanzer’s International Wine Cellar.
“We want to give customers confidence that they’re getting a high-quality wine from the moment they walk in the store,” says Elias Mahfuz, co-owner of W90+.
With over 30 years of wine industry experience, Purchasing Director Richard Park will be responsible for buying and maintaining the store’s selection as well as day-to-day store sales and management. The store will feature wines from several regions as well as wines from smaller vineyards and up and coming producers. Most wines will be priced under $30.
Additionally, W90+ will be the only area store to feature an Enomatic wine dispenser, allowing customers to sample up to 8 different wines in 1 oz, 2 oz and 3.5 oz pours. A hand-selected variety of gourmet cheeses, dried meats, crackers and fresh bread from the popular French Pantry on Powers Avenue will also be available for purchase. W90+ will also offer tastings of selected wines and frequent discounts.
W90+ also state that they plan to open additional locations soon in the Jacksonville area.

If you’ve gotten this far into the article, I have to congratulate you! The title of this article is more than an ample mouthful for most! For that reason, I wouldn’t expect to find this wine too widely carried by retailers, although it’s worth seeking out!

Cantina Trexenta is actually a co-operative of 23 grape-growers from different towns within the Trexenta region of Sardinia. The group was formed in 1956, with growers pooling together their supplies of grapes, and then making wine under one label.
